{Awesome Vinyl Calendar}

Some days I feel like I'm losing my mind.

I guess it's because the kids are getting older and becoming more and more involved with daily activities such as school, ballet, and gymnastics. Add in other stuff like dentist/doctor appointments, church callings, family activities, plans with friends, anniversaries, birthdays, vacations, and so on. I used to be able to remember it all in my head but apparently the brain cells have been dying off slowly and I'm no longer able to keep track of it all on my own.

So I decided it was time to get a family calendar where I could write down all of our "stuff." I know. We've been married for 8 1/2 years and have 2 kids and I have never had a calendar in our house. 

I officially began my search for  1) a cute calendar and 2) a good way to display it. I knew I wanted a cute calendar that was fun to look at but I didn't want to commit to making one of those scrapbook styles because I have tried that in the past and I never made it beyond March.

So the scrapbook style was out. Next up. A digital one? Those are super easy and fun to create but I wanted something a little larger so there was plenty of room on the daily spaces to write stuff down. 

Scratch the digital. Then I was online one day and looking at Pinterest and I decided to do a search for "calendars" and see what other people had come up with. Lo and behold, I found a vinyl dry erase calendar that was perfect!

I hadn't thought of dry erase and vinyl but I loved the idea that it was going to be flat on my wall and that I could use colored markers and if I needed to make a change or erase something, it was as easy as wiping it off and adding something else.

I decided to head over to ETSY and I found a shop called "Simple Shapes" (click here to visit their ETSY Shop) who offered a ton of styles for these kind of calendars. I found one that I liked, ordered it, and had it just in time for the new month. 

Yay for organization and attempting to keep track of it all.

{Shredded Chicken}

I don't want to seem overly dramatic but, I am about to change your life! I found this little tip on Pinterest about 6 months ago and I am honestly giddy every time I use it. It never fails, saves so much time and gives you perfectly shredded chicken in seconds.

All you do is...cook your chicken however your recipe calls for it. Once the chicken is cooked and ready to be shredded, toss it into the bowl of your stand mixer
Now, using your paddle attachment mix on high for about 8-10 seconds. TaDa! Perfectly shredded every time!
 Isn't that FANTASTIC!?!

A couple quick notes:
Make sure you watch it closely, the shredding happens quickly and if you let it go too long it will be too fine. Also, I haven't tried this with other meats but I can't imagine it not working as long as it is boneless and fully cooked.

{Wingers Sticky Fingers}

   I saw this recipe from Six Sisters Stuff {one of my go to recipe blogs...Love them and all their amazing recipes!} and knew I had to try it ASAP. My husband loves Sticky Fingers and I love recipes with only 4 ingredients so I had a feeling it was going to be a winner. And let me tell you it was!
   This recipe can be used in so many ways, just like they do at the restaurant. Serve them all on their own with ranch for dipping, Chop them up and toss them into a salad, or my husband's personal favorite, make Sticky Fingers Quesadillas.

Winger's Sticky Fingers Recipe:

1 pkg. frozen breaded chicken strips
6 Tbl. Frank's Hot Sauce
4 Tbl. water
1 1/2 c. brown sugar

 Prepare the chicken strips as directed on the back of the package.

 Heat hot sauce, water and brown sugar in a saucepan over medium heat, until sugar is dissolved.

Pour sauce over chicken, and enjoy!  Serve with ranch dressing for dipping.

Serves 2-3 people.

These seriously are so quick, easy and yummy! Hope you all like them as much as we did!

{Valentine's Day Class Treats}

I knew the minute I saw this on Pinterest I would be making something similar for my daughter's school class.
How awesome are those???

I loved this idea so I began my search for my supplies. I found clear plastic tubes, Valentine's Day scrapbook paper, and some fun glittery ribbon at one of our local scrapbook stores, Dandylion Wishes, and I put them all together.

 I only had to make 10 of them (yay for small preschool classes!) and they came together in about half an hour. Looks like we are ready to go to her Valentine's Day party on Monday!

   I found both of these today on Pinterest and haven't been able to get them off my mind. I loved the motivation each gave me to want to be a better Mom to both my little girl and my little boys.
